No-Bake Key Avacado Lime Cheesecake Pie
A most delicious summer treat
Here is the recipe.
Cream Cheese: 300 grams
Whipping Cream: 350 ml (200 ml for mixing with avocado + 150 ml for combining with gelatin)
Medium Avocado: 1, cut into big cubes
Limes: 2, juice7d and zested
Granulated White Sugar: 1 cup
Gelatin Powder: 1 sachet (equivalent to 2 1/2 teaspoons)
Graham Cracker Grounds: 1 cup
Unsalted Butter: 100 grams, melted
Lime: For garnishing

Preparation Steps:
Crust Preparation:

Process graham crackers into fine grounds, mix with melted butter, and press onto the bottom of a 10-inch springform pan. Chill in the freezer to set.
Gelatin Mixture:

Combine 150 ml of whipping cream with gelatin powder, heat until gelatin dissolves, and strain.
Cheesecake Mixture:

In a food processor, blend avocado, cream cheese, sugar, 200 ml whipping cream, lime juice, and zest until smooth.
Add the gelatin mixture and continue to blend until creamy.
Assembly:

Pour the cheesecake mixture over the crust, smooth the top, and chill in the freezer for 2 hours to set.
Garnish and Serve:

Release the cheesecake from the pan, garnish with lime slices and zest, and serve immediately.
