These sweet potato and peanut butter muffins are not only delicious but also packed with nutrients like fiber, protein, and vitamins A and C, making them a healthy snack choice. Participants had the option to substitute regular flour with a purple flour blend (purple wheat berry, rye, and barley) and swap butter for peanut butter.
