Orange and Mint Beet Salad. The first harvests of baby beets are at the farmers markets. I love getting a variety of organic heirloom beets that are multi couloured and have different sugar flavours. Choose new baby full formed globes. The beet tops make agreat wilted salad green. I wash clean the beets and place them into a steamer basket with out crowding. Depending on the size about 12 minutes should do. Place into some ice cold water to make the skin removal easy. It also will halt anyfurther cooking. Now cut the beets into nice wedges and any small ones leave whole. Section a valencia orange and juices and add to the beets. Raspberry tastes yummy too! Rip up some fresh mint leaves and add to the beets. Salt Pepper and white or flaoured balsamic vinegar. Miran Rice wine vinegar works well also. A dash of virgin olive oil. Toss and taste, adjust seasonigs. Makes any back yard bbq yummy good!
