Hot Dog Confidential. Since I was a young lad I've always been a glutton for a good hot dog. My dad had groomed both me and my brother Ralph to run his hot dog Empire. Dad made hot dogs for the old Iroquois Hotel Beverage Room numbering in the thousands. He also had placed several retro electric current grilled hot dog machines in the other local hotel beverage rooms and it was my job to refill and clean the machines. That was my introduction to the life of a tube steak addict. This one job I held was the kitchen that made all the meals for the Toronto Day Cares and Public School. Once a week was hot dog day and I would use a 100 gallon steam kettle to cook up 3000 hot dogs. I prepared hundreds for the Canadian Open. Most every restaurant I cooked at had a hot dog on the menu. I was weaned on Schneider's Red Hots but soon I was on a mission to find the best. Shopsy's, Chicago 58, Nathan's, Oscar Mires, Swift Premiums, Burns, Hoffmans, Maple Leaf, Hebrew National. Only pork or beef not chicken, turkey or tofu. Every Canada Day Holiday for the last 7 decades I've had a hot dog either steamed, boiled, microwaved, air fryer, grilled, panfried, deep fried, bbq'd, smoked or held over a camp fired served with baked beans or off a food truck.
