Mac & Cheese Bites. I found this to be a great brunch canapé or a tasty side dish with ribs. The same recipe works for mini scallop potatoes instead of macaroni. Makes 48 bites which freeze well for later use. Stuffed Baked Potato w/ Pulled Saucy Braised Short Ribs. To braise the ribs I added a can of stewed tomatoes, ketchup, mustard and soya sauce. Crock Pot for 6 hours till it falls of the bone. Bake a few spuds, chop-chop some fresh parsley and green onion. The au jus cooking sauce is mighty fine.

Today is the first Sunday in April and the Statford Swans are being released led to the Avon Pond by a Scottish Piper. Swans from other area county ponds are wintered in Stratford.

Paired Swan Pairs are called Penn and Cobb.

While I was downtown in Preston I stopped in to the PIZZA-IOLO on King Street for my first time. Being one who loves his pizza, my visit was a very tasty experience. I liked the topping selection of the take away slices but the small personal hand tossed pepperoni was my choice.
